Not maintaining temperature

We just had our hot water heater replaced under home warranty but the new Rheem 75 gallon gas unit doesn't maintain temperature during a 5-10 minute shower--we have to continually adjust the shower valve until its almost completely cranked over to hot 100%.
Can't remember the make of the previous unit but it didnt do this--they were the same size. I've adjusted the thermostat to see if that solved it--but it hasn't. Suggestions? Nothing else changed--same location, plumbing, etc. also, we're noticing the exhaust fan on top of the unit will remain on at times for many minutes--have to go to basement and turn blower switch off to get it to stop, then turn it back on and it stays off...
Suggestions?
